The essential evolution of cooking and seasoning

In 1996 Giuseppe Grappolini defined an objective: to find the best solution for "marrying" the rich aromas used in the kitchen with Extra Virgin Olive Oil.

During the next four years the project developed daily through a continuing fruitful relationship with Vegetal Progress of Turin, and resulted in today's introduction of a "naturally" innovative product.

The fortunate collaboration was born from a natural affinity, from shared intentions and objectives based on solid principles, foremost the attention to and maximum respect for nature and man. Strong moral principles and a curiosity toward changes in the way we live have united Grappolini and Vegetal Progress, motivating their profound and well-articulated research.

Res Essenziale is the fruit of this research. This range is the combination of the natural essential oils of rosemary, basil, garlic, lemon and sweet orange with organic extra virgin olive oil. It is the perfect marriage of Grappolini's Ciao Palle organic extra virgin olive oil, an oil of the highest quality whose entire cycle of production is perfectly controlled, and the essential oils, rigorously natural, produced by Vegetal Progress.

The nutritional value of Res Essenziale is of great importance. It is easily transported to all areas of the human body together with the substances it is combined. Essential oils activate our tastebuds, activate digestion, and help the body in metabolizing fatty acids.

Not only is it beneficial to our metabolic and digestive systems, but it even solves the problem of availability of fresh seasonal products, and it also adds a personal touch to the recipe and quickens the preparation of the dish. It is rich in freshness and flavour and brings together in harmony all the fragrance of the preparation.

  Each 175ml bottle of Res Essenziale is packed with goodness, freshness and flavour and the follwing were needed to make up the equivalent weight required for each 175ml bottle:
  • 5 kilos of fresh basil is used to obtain 200g of essential oil;
    .
  • 10 heads of fresh garlic to obtain 35g of essential oil;
    .
  • 5 kilos of fresh rosemary to obtain 210g of essential oil;
    .
  • 11 kilos of fresh lemons to obtain 11 kilos of essential oil
    .
  • 5 kilos of sweet orange to obtain 5 kilos of essential oil

These natural essential oils are lipohilic substances that are obtained through distillation. They are extremely stable substances that do not oxidize and blend very well with extra virgin olive oil to produce an oil with long-lasting freshness. They should be stored at room temperature away from direct sunlight.

The introduction of Res Essenziale has been highly innovative and of immense value to most households and catering establishments around the world. It has given cooking a new dimension and Grappolini has opened the doors to a new world of flavours and into the new millennium.
