Method |
2 chicken breasts
1 onion, chopped
1 tbsp green peppercorns
Seasoned flour
Rind of 1 lemon
100ml vegetable stock
50ml Grappolini Felicita Extra Virgin Olive Oil
3 tbsp Grappolini Grande Aceto Balsamico
A handful of freshly chopped tarragon
Stirfried asparagus for serving |

Pass the
chicken breasts in seasoned flour and fry in hot extra virgin
olive oil on both sides until golden. Set aside and in the same
oil fry the chopped onion, peppercorns and lemon rind until
tender. |

Add the
chicken again and pour over the chicken stock and reduce until
ready. Sprinkle over the balsamic vinegar and chopped tarragon.
Serve immediately with stirfried asparagus. |
