grilled sardines
Ingredients - Serves 6 Method
1 kg fresh sardines, cleaned and heads removed
extra virgin olive oil, for brushing
salt and freshly ground black pepper
a large handful fresh parsley, chopped
lemon wedges
Preheat the grill and rinse the sardines under cold running water. Pat them dry with kitchen paper and place on a board. Brush the sardines generously with extra virgin olive oil and season with salt and freshly ground pepper. Grill for about 4 minutes on each side or until the skin begins to tinge. Serve at once with chopped parsley and loads of lemon.
