spaghetti with tuna and peppers |

Ingredients

Method |
500g spaghetti
1 red pepper
1 yellow pepper
300g fresh tuna fillet, cut into cubes
40g pine nuts
1 chilli pepper or chilli powder, optional
extra virgin olive oil
salt and freshly ground pepper

Clean
and deseed the peppers and cut very finely.
In a frying pan, heat 5 tbsp extra virgin olive oil and
fry the peppers and pine nuts until soft and golden, for about
3 minutes. Add the tuna, season with salt and freshly ground
pepper and continue cooking for another 2 minutes. Add the
chopped chilli pepper or the chilli powder, if using and remove
from the heat.

In a
large pot bring salted water to the boil. Add the pasta and
cook until al dente. Drain and add to the frying pan with
the vegetables and fish and cook for 1 minute to heat through.
Serve at once.
