salmon burgers |

Ingredients
- Serves 4

Method |
600g salmon fillet,
cleaned
juice and rind of 1lemon
1 tbsp soy sauce
extra virgin olive oil
salt and freshly ground pepper |

Roughly
chop the cleaned fillet and put it in a bowl. Add 1 tbsp extra
virgin olive oil, juice and grated rind of the lemon, soy
sauce and seasoning and mix well to form a paste.
Divide into four burgers and put in the fridge to rest for
10 minutes.

Meanwhile
heat 2 tbsp extra virgin olive oil in a frying pan and fry the
burgers for 5 minutes on each side or until golden. Serve warm
or cold. |
