oriental honey roasted duck
Ingredients - Serves 4 Method
1 duck weighing about 2 kilos
3 cloves garlic, crushed
5cm piece root ginger, grated
125ml extra virgin olive oil
125ml tamari sauce
3 tbsp clear honey
Juice and finely grated rind of 1 lemon
Large handful of fresh parsley, chopped
Roasted root vegetables, to serve

Wash the duck under running water and pat dry with kitchen paper. Using a skewer prick lightly around the sides of the duck.

In a small bowl whisk together the extra virgin olive oil, tamari sauce, garlic, ginger, honey, lemon zest and juice until mixed.

Brush an ovenproof dish with extra virgin olive oil. Place the duck in the dish and pour over the olive oil and tamari mixture. Cover the duck with cling film and leave to marinate for not less than 2 hours.

Preheat the oven to 190C.

Roast the duck for 1 hour 50 minutes basting occasionally. Remove from the oven and allow to stand for 10-15 minutes before serving.
