grilled red mullet in salt
Ingredients - Serves 1 Method
3 red mullets
1 clove garlic
Parsley
Rosemary
Juice of one lemon
Fine salt
Freshly ground pepper
50ml Grappolini Paneolio Extra Virgin Olive Oil

Prepare a hot grill. Clean the mullet from its gills and insides, leaving the scales. Rinse under cold running water and pass through fine salt. Grill on both sides.

Meanwhile, whiz together the herbs, extra virgin olive oil and lemon in a blender. When the fish is ready serve with the sauce on the side.
This is another method of eating fish al sale but on the grill. The flesh becomes exceptionally tasty but not salty since the fish has not been scaled.
