baked sea bream with lemons |

| Ingredients -

Method |
1 sea bream weighing
not less than 1kg
1 kg small marrows with their flowers still attached
2 lemons, sliced
A few rosemary sprigs
Extra virgin olive oil
Salt and freshly ground pepper

Preheat
the oven to 200C and arrange a piece of foil large enough
to cover the whole fish over the dish.
Rinse the fish under cold running water and pat dry with
kitchen paper. Insert a few lemon slices, some rosemary sprigs
and seasoning in the gut. Close and place in the prepared
dish and arrange the remaining lemon slices over the top.

Drizzle
over some extra virgin olive oil and close tightly. Bake in
the preheated oven for 30 minutes.
Meanwhile wash the marrows trying as much as possible not
to remove the flowers. Steam for a few minutes until tender.
Remove the fish from the foil and arrange on a large serving
plate. Garnish the fish with the steamed marrows, a drizzle
of extra virgin olive oil and a grinding of pepper.
