grilled swordfish with mediterranean sauce |

| Ingredients -

Method |
4 plum tomatoes, peeled,
seeded and chopped
1 small red onion, finely chopped
2 garlic cloves, crushed
6 tbsp mixed fresh herbs which
should include, parsley, basil, coriander,
tarragon, chives
120ml extra virgin olive oil
4 swordfish steaks, 175g-200g each in weight
Salt and freshly ground black pepper |

In a
small bowl mix together the tomatoes, onion, garlic and herbs.
Stir in the extra virgin olive oil and season with salt and
freshly ground black pepper. Cover with cling film and allow
to stand for about an hour at room temperature.
Meanwhile preheat the grill, season the fish steaks and
brush with extra virgin olive oil. Grill for about 5 minutes
until lightly golden in colour.

Warm
the tomato sauce in a pan for a few minutes and serve alongside
the fish. Serve with a mixed leaf salad and boiled potatoes.
