radicchio salad with pears
and cottage cheese
Ingredients - Serves 2 Method

1 head radicchio lettuce
1 pear
1 cottage cheese
Juice and zest of an orange
Chopped fresh chives
Sea salt and freshly ground pepper
50ml Grappolini Paneolio Extra Virgin Olive Oil

Remove the radicchio’s core and cut it into 4 vertical pieces. Chop the pieces into fine slices, julienne strips. Peel the pear, core and slice.

Add the zest and juice to the extra virgin olive oil, season and whisk lightly.

Strain the cottage cheese, add to the radicchio and toss with orange and extra virgin olive oil dressing.

Before serving garnish with the chopped chives.

The chives can be easy to cut with a pair of scissors to avoid squashing them.
