seafood salad
Ingredients - Serves 2 Method

1 garlic clove, crushed
About 7 tbsp dry white wine
600g mixed seafood such as prawns,
Mussels and boneless fish in chunks
100g French beans
1 red pepper
2 tomatoes
1 tbsp chopped red onion
100ml Grappolini Paneolio Extra Virgin Olive Oil
Juice of one lemon
A few slices ofpickled gherkins, to garnish
Sea salt and freshly ground pepper

Chop the vegetables into cubes and set aside. Heat 50ml extra virgin olive oil in a heavy based pan, add the crushed garlic and cook until soft.

Stir in the seafood and add the white wine and panfry for 2-3 minutes until tender.

Add the vegetables to the mixed seafood and mix well. Arrange the seafood and vegetable salad on a serving plate. Drizzle over the lemon juice and the remaining extra virgin olive oil.

Garnish with the gherkin slices. Season with salt and freshly ground pepper and serve at once.

If lampuki season has just started, try adding steamed lampuki fillets to this salad.
