| Ingredients -

Method |
| 1 garlic clove,
crushed
About 7 tbsp dry white wine
600g mixed seafood such as prawns,
Mussels and boneless fish in chunks
100g French beans
1 red pepper
2 tomatoes
1 tbsp chopped red onion
100ml Grappolini Paneolio Extra Virgin Olive Oil
Juice of one lemon
A few slices ofpickled gherkins, to garnish
Sea salt and freshly ground pepper |

Chop the vegetables into cubes and set aside. Heat 50ml extra virgin olive
oil in a heavy based pan, add the crushed garlic and cook
until soft.
Stir in the seafood and add the white wine and panfry for
2-3 minutes until tender.

Add
the vegetables to the mixed seafood and mix well. Arrange
the seafood and vegetable salad on a serving plate. Drizzle
over the lemon juice and the remaining extra virgin olive
oil.
Garnish with the gherkin slices. Season with salt and freshly
ground pepper and serve at once.
