french beans and tomato salad |

| Ingredients -
Serves 4 |

Method |
500g plum tomatoes
2 tbsp extra virgin olive oil
2 garlic cloves, crushed
300g French beans
2 tbsp freshly chopped parsley
Salt and freshly ground white pepper |

In a bowl of hot water blanch the tomatoes. Peel and remove the seeds and chop
roughly.
Bring a pot of water to the boil and add the beans and for
5 minutes until tender.
Drain and allow to cool slightly.

In your
serving bowl, pour the extra virgin olive oil, add the crushed
garlic and the chopped tomatoes.
Mix well. Add the slightly cooled beans and the parsley and
mix well. |

| Before you place tomatoes in water, take
a knife and lightly cut a cross on top of the tomato.
This will help the peeling process. |
