green olive and fennel salad |

| Ingredients -
Serves 4 |

Method |
1 fennel bulb
150g green olives, roughly chopped
1 tsp fennel seeds
1 red chili pepper, seeded and finely chopped
Grated rind of 1 lemon
5 tbsp extra virgin olive oil
Freshly ground pepper |

Trim both the root and stalk ends of the fennel bulb. Chop the bulb and place
in a salad bowl.
Add the chopped green olives and chili pepper. Add the fennel
seeds, grated lemon zest, extra virgin olive oil and seasoning.

With
your hands toss all the ingredients together making sure that
they are all coated in oil and spices. Serve at once. |
