red lentil and carrot soup |

| Ingredients -

Method |
| 25g red lentils
1 small onion, chopped
1 carrot, chopped
½ tsp curry powder
Vegetable stock
Salt and freshly ground pepper

Place the lentils in a small pan, add the onion, carrot,
curry powder and vegetable stock. Bring to the boil and allow
to simmer, covered for 40 minutes or until the lentils are
tender.

Season
with salt and freshly ground black pepper and serve warm.
