bruschetta with tomatoes and garlic |

| Ingredients -
Serves 4 |

Method |
Maltese ftira or wholemeal
bread
Summer tomatoes
1 Fresh clove of garlic, crushed
Grappolini Extra Virgin Olive Oil
Fresh basil leaves, torn
Salt and freshly ground pepper |

Bring some water to the boil. Put the tomatoes in a bowl and pour over the
hot water.
Leave for a minute to blanch. Drain the tomatoes, peel, halve
and deseed the tomatoes.

Put the
halved tomatoes in a bowl and add all the other ingredients.
Stir well and leave to marinate for about 30 minutes.
Toast the bread of your choice and top with the tomato mixture.
Serve warm.

| Choose ripe and juicy tomatoes. Crushing
the garlic is easy – just press it with the side
of the knife. Tear the basil leaves by hand to retain
its flavours. |
