cheese crackers
Ingredients - Serves 1 Method

3 eggs
100g hard cheese, montasio
60g Parmesan
20g butter
Salt
Nutmeg

Cream the butter and work in the 2 cheese, egg and nutmeg. Turned the mixture into a mould lined with buttered greaseproof paper.

Cook in a moderate oven but do not allow to brown. Leave to cool. Cut into cubes and serve with steaming soup.
Perfect with soup
