mushrooms stuffed with prawns
Ingredients - Serves 2 Method
6 large mushrooms, stems removed
1 clove garlic, crushed
1 onion, finely chopped
15ml Grappoloini Paneolio Extra Virgin Olive Oil
1 tbsp chopped chives
1 chili pepper
1 tbsp grain mustard
6 round slice mozzarella
20g prawns

Wash and clean the mushrooms. Sweat the garlic, onion and chili pepper in extra virgin olive oil.

Add the prawns, chives and mustard. Cook until the prawns are al dente.

Drain well and use to stuff the mushroom caps and top with a slice of cheese.

Put in an ovenproof dish and bake in the oven for about 7 minutes at. Serve at once.

You can always sprinkle some paprika on top of the mozzarella just before placing them in the oven. Remember not to overcook the prawns as they will shrink and become tough.
