artichoke hearts with white wine
Ingredients - Serves 2 Method
6 fresh artichokes
1 red onion, chopped
3 cloves garlic
Grappolini Paneolio Extra Virgin Olive Oil
1 carrot
1 tbsp peppercorns
1 bay leaf
1 lt white wine

Remove the leaves from the artichokes until you reach the heart. Peel away the stem and while cleaning, keep a bowl of water and lemon juice to prevent the artichokes from turning black.

Scoop out the hair from the middle of the artichokes and cut off the top. Keep in the bowl of lemon juice and water while you prepare the others.

In a large frying pan heat some extra virgin olive oil and fry together the onion, garlic, carrot, peppercorns and bay leaf. Add the artichoke hearts and cook for a few minutes.

Add the wine and keep cooking until all the wine has been absorbed. Serve warm.

This basic recipe can be used for many other recipes, like pasta dishes, ravioli, as accompaniments and side dishes.
By cleaning the artichokes in lemon juice and water also helps remove the stains from your hands.
